Big Potta Oatmeal
My friend Patricia gave me this great idea for oatmeal. I cook about 4 cups of oatmeal-enough for our family of 5 to eat for two breakfasts. I cook the oatmeal first in water. Once it is cooked I add milk to desired consistency (hers was delightfully thin...much different than I had ever had), then add honey to desired sweetness, cinnamon to taste, and this time I even added a bit of vanilla. My friend sometimes adds tiny diced apples. I make this at night and then put it in a container in the fridge. It is ready in the morning for me to just scoop out and warm up in a sauce pan on the stove. It is quick, easy and healthy!
