Baking...

Ever since Benjamin was born I've had a huge craving to bake stuff. Maybe it is this horrible unconscious drive to eat lots of bread with real butter and honey and gain weight. I really don't want to gain weight, I want to lose it and fit into some decent clothes but I've only gained weight since I got to my after birth weight. Oh well, I'm just so hungry and butter and honey are just so yummy! :) At some point I'll get motivated and lose the weight....
I baked these loaves of whole wheat bread today. They turned out really nice. It is hit-or-miss when I make bread. It is always edible but it doesn't always rice so nicely and stay risen during the baking process. (I finally learned to put the bread in a non-preheated oven...if you put it in when it is preheated the intense heat will make the loaves fall---this tip has been really helpful in keeping my loaves light and high)


I decided to try making homemade whole wheat English muffins for the first time a couple days ago. They turned out pretty good. But they aren't hole-y like the ones from the store. Not sure how to make them have that hole-y texture. I split one of them and topped it with plain spaghetti sauce and mozzarella cheese and baked it in the oven and it turned out really good. One thing I need to start making but I can't seem to make myself very often is whole wheat tortillas. It takes SOOO long to stand there cooking each individual tortilla and they just don't taste any better than store bought ones. I know they are way healthier and cheaper but oh well. I went ahead and had Steve buy 10 packages of whole wheat tortillas from whole foods today. They have gotten pretty pricey-at 2.99 a package for 10 tortillas but when you figure that we eat just one of those packages to have bean and cheese quesidillas for dinner, that is a pretty cheap dinner to feed a family of 5 (6 really but little one isn't eating table food yet :).

I didn't know that about bread. Your english muffins look great!

These english muffins looks SO yummy! And personally I thought the pea soup and rice looked great too!
